You'll be ok down to zero. The bike is filled, at the factory. Your dealer would have had to drain that, and refill if they wanted to screw you over....not likely.
I don't know if you are someone who keeps your bike a long time? If you cycle them, every two years, the coolant is a non issue. I keep mine until I want something else. That could be a long time.
If you are like me, thn the coolant matters. It's very easy to change . You don't need any special tools or skills to accomplish the change.
I buy the Honda car compatible blue antifreeze. Wal Mart has it. There are probably 10,000 different coolants. No need for special, magic coolants. People use engine ice. It's fine to use, but all it is I Sierra antifreeze and water wetter. If you buy those two products , you can mix your own for 1/2 the cost.
With coolant, you never drain 100% of what's in the engine. You always leave 20% ish behind. With that in mind, I like to change mine, yearly. If you do this, it never goes bad and you can avoid having to flush the system. 1 gallon of coolant,dedicated to motorcycles, lasts so long I never even bothered to remember how much my c14, or Ninja holds.
