my $0.02...
The zx10r is a track-designed bike...and can be a 'painful' street bike due to it's gearing and peaky torque curve. It also has a 'lay on the tank' seating ergonomics.
The Ninja1000 is designed to be a sport/tourer with a more upright riding position. The engine has a flatter torque curve and the bike is designed with street/highway riding in mind.
Your choice depends on your use/application...
Your height can cramp your seating position on both bikes. Many people have used lowering kits to push the footpegs down to make more space for their knees. On the N1K you might want to consider getting a plusher seat with more padding to help with both comfort and height...

TBH at that height you are probably better off looking at adventure style bikes that are physically bigger - KTM Super Adventure / BMW RT / BMK K1600 / BMW GS etc

you’re probably correct, it’s honestly just my preference. i understand they’d be more comfortable and better for people my size, i just fell in love with ninjas.

@naren covered the important points.

I'm 6'3" (36" in inseam) and find the 1000SX very comfortable. I switched to the 1000SX after giving up track days and turning 60. The 1000SX replaced my track bike (2003 ZX6R) and street bike (2002 CBR954). The sport bikes are great when you're younger and/or doing track days. I miss the high end rush of the 954 a bit, but everything else about the 1000SX makes it a much better bike for me these days.

I'm 6'4", and agree. I came from a 19 Ninja 650 and the N1K is definitely the more comfortable option. The supersports like a ZX10R or ZX6R are fun for very short bursts, but torture past that.

I have the zx10 and Ninja 1000. The Ninja 1000 is a much better street bike. But if you have long arms the zx10 riding position might not be so bad for you. There's more legroom on my modded 10R then my Ninja. The pain comes from being hunched over those stiff forks.

Be aware that I'm 5'10" and 185lbs full gear on and the rear suspension on my 2021 is kind of limit for my weight. You probably weight more than me so you might have to change the rear spring.

Interesting. I'm 230 pounds without gear, and I find the rear suspension is just fine after dialing in about 3-4 clicks more preload. /shrug

If really depends on the type of street riding you are planning on doing, for longer periods in the saddle at a moderate pace then the Ninja 1000 is going to be a much more comfortable and easy to live with option as a day to day streetbike, which has plenty of easily accessible low/ midrange power on tap at most revs and plenty of torque through the lower ranges , but if your plans are carving the local canyons closer to redline at a sporty pace with less overall effort and you are partial to revving into the upper reaches of the tachometer then obviously the ZX10 with it's lower weight and cornering ability is going to be the better tool for the job.

Looking at each bikes power/torque curves you can see the 1000SX excels in the lower/ midrange revs.
These charts show flashed/unflashed numbers for ninja Sx and 2016 ZX10.

Looking at your physical dimensions on
Motorcycle Ergonomics
will give you some idea on how you are going to look/fit on each bike, unfortunately their bike records only run up to 2014 models, but i expect there is ony minor differences to the current models.
Being over 6+ foot you're gonna look a little odd unless you opt for a BMW RS1200 or something along those lines.
Best to try and get a test ride on both before making a firm decision.
